How to make

A round mold without a ring 20 cm is used.

In a saucepan the caramel is prepared from the sugar and a little water. After it acquires a golden color, it is poured on the sides of the mold, then it is set aside.

The egg whites and a pinch of salt are beaten into a foamy mixture. Add the two types of sugar a little at a time and beat at high speed until a white mixture is obtained. The egg white mixture is poured into the mold and it is leveled out as much as possible. Thus prepared, it is placed in a larger baking pan to be baked in a water bath. Pour hot water into the large baking pan, which goes halfway.

Bake in a heated oven at 360°F (180°C) for about 20 minutes. Turn off the oven and open the door, enough to support it with the handle of a wooden spoon, for about 10 - 15 minutes. That way, it won't flatten drastically, and after it's taken out of the oven, it's inverted onto a serving plate. Turning is easy. It is cut into pieces like a cake.

A gorgeous light dessert wrapped in warm caramel, what else is needed but leftover egg whites that I often freeze but sometimes throw away so I can turn them into a fluffy egg dessert. It's one of those light desserts that you eat quickly and yet it's worth your attention. It's best when the Portuguese Dessert Molotof is served warm.
