How to make
We peel the potatoes with a potato peeler, because of the thin skin. We cut them into cubes along with the leeks, the onions, the carrots, the red peppers and finally add the washed red lentils to the pot.
Pour water so that it covers the vegetables. Season with fat and salt. Boil everything until the lentils are ready.
We leave it to cool down a bit and blend with a blender.
Season the vegetable soup with the spices and lemon. I added mozzarella to taste.
If desired, croutons can also be included in the recipe.
