How to make
To prepare the great Happy-style breaded cheese, separate the whites from the yolks of the two eggs. I use the largest size-XL eggs.
Beat the egg whites with the salt until fluffy. Put the egg yolks in a separate bowl, mix them and add the beer to them, and then the flour. Beat very well so that there are no lumps. Add carbonated water only if the consistency seems too thick.
The resulting two mixtures should be equal in volume.
To the one with the yolks, start adding the beaten egg whites and mix smoothly with a spatula until they are absorbed and a fluffy mixture is obtained. Season with black pepper and garlic powder.
Leave the prepared breading in the refrigerator for 1 hour.
The cheese you will be breading should not be very cold, nor should it be at room temperature so that it is soft and warm on the inside after it is breaded. However, if you use a type that is very soft in consistency, it is better if it is cold, straight out of the refrigerator.
Cut it into regular large cubes or rectangles.
Heat the oil over high heat, one or two degrees below maximum.
Dip the pieces of cheese into the fluffy breading and fry until golden.
Remove the finished breaded cheeses on kitchen paper to absorb the grease, then arrange on a serving plate.
Serve the classic appetizer warm and eat the Happy-style breaded cheese with a glass of beer or wine.
