How to make
Cut the chicken fillet into even smaller fillets, cut each one lightly across to get a small pocket. Blend a few cloves of garlic with the parsley and breadcrumbs.
Add the olive oil, a little salt and pepper and blend some more. Fill each chicken fillet with a little cream cheese, roll it lightly in olive oil and then in the blended paste.
Arrange the fillets in a greased baking tray, sprinkle lightly with olive oil and drained lemon juice and put to bake in a moderate oven for about 25-30 minutes.
Serve with a garnish of steamed vegetables.
