How to make
Mix the semolina, sugar and flour with the oil, vanilla, baking powder, orange zest and water and mix a dough. Cover it and let it sit for 30 minutes. Meanwhile, pit the cherries and chop them finely. Mix them with the sugar and put them on the stove with 1 tablespoon oil to saute briefly.
Remove and mix with the cinnamon and crushed walnuts (or other nuts). Arrange a large towel on the counter with a piece of baking paper. Spread out the dough in a square on it, 1/2″ (1 cm) thick. Smear the filling evenly on top and using the towel, carefully roll it up, then finally, remove the paper.
Transfer it into a tray with baking paper and place in a preheated 360°F (180 °C) oven to bake for about 35-40 minutes. Another option is to cut the roll into 2″ (5 cm) thick pieces and arrange them in a tray with baking paper. Bake them in a preheated 360°F (180 °C) oven for about 25 minutes or until nicely browned.
Sprinkle the finished roll with powdered sugar, ground nuts and decorate with fruits, which you can jelly if desired.
