Ingredients

  • For the cake layer
  • egg whites - 6 pcs.
  • sugar - 6 tbsp.
  • flour - 4 tbsp.
  • baking soda - 1 tsp.
  • lemon juice - 1 tbsp.
  • walnuts - 10 tbsp. ground
  • vanilla essence - 1 tsp.
  • For spreading
  • peach jam - 5.3 oz (150 g) or another
  • Charlotte cream
  • egg yolks - 6 pcs.
  • milk - 2/5 cup (100 ml)
  • butter - 4.2 oz (120 g) 82.5% fat
  • powdered sugar - 4.2 oz (120 g)
  • vanilla essence - 1 tsp.
  • cognac - 2 tbsp.
  • Chocolate ganache
  • dark chocolate - 4.2 oz (120 g) /60%/
  • vegetable fat - 2 tbsp. /or 80 - 100 ml cream/

How to make

Preparing the walnut cake layer.

Beat the egg whites well while gradually adding the sugar.

Add the sifted flour, baking soda and lemon juice. Mix with a spatula carefully and lightly.

Add ground walnuts to the batter and gently mix until absorbed.

Transfer the mixture into a greased mold 7x8″ (18x20 cm), previously covered with baking paper.

Bake the cake layer in an oven preheated to 320°F (160°C) for 40-50 minutes. Observe after 25 minutes and judge the readiness of the cake layer according to your oven.

Cut the cake layer horizontally into three equal parts.

Preparation of Charlotte Cream.

Take the butter and beat it well. Leave it at room temperature.

Beat the egg yolks for a minute, adding the powdered sugar (the moment to add milk or leave without it in case of intolerance).

Place the cream in a water bath and stir. When the cream starts to thicken, remove it from the heat.

It should look like a sauce, not like a pudding.

When it cools to room temperature, you add it spoon by spoon to the whipped butter with the mixer until it is absorbed.

Spread each cake layer with jam of your choice (or skip this step). Spread the cream evenly over the cake layers.

Preparation of the chocolate ganache.

Melt the chocolate in a water bath and add the fat (I use walnut oil). The other option is to add an equal amount of cream (heated to a boiling point, but boiling is not fatal) to the 60% cocoa chocolate (to obtain a large amount).

I give you a great base, you can add caramel, fruits, nuts, liqueurs, decorations and anything you like.
