Ingredients

  • apples - 2 - 3 about 400 g
  • brown sugar muscovado - 5.3 oz (150 g)
  • peanut butter - 1.8 oz (50 g)
  • oranges - 1
  • oil - 3.4 fl oz (100 ml)
  • coconut flour - 1.8 oz (50 g)
  • flour - 3.5 oz (100 g), type 500
  • baking powder - 1 tsp.
  • linseed - 2 tbsp. ground
  • baking powder - 1 tsp.
  • soda - 1/2 tsp.
  • raisins - 3.5 oz (100 g)
  • cinnamon
  • dried ginger
  • nutmeg
  • nuts - for sprinkling

How to make

Today I have a vegan apples and nuts cake for you, which you can treat yourself to even during fasting.

Mix all the dry ingredients (coconut flour, wheat flour, baking powder, ginger, cinnamon, nutmeg, and ground flaxseed) without the sugar in a bowl.

Peel and cut apples into small cubes.

Put the apples in a bowl and add the sugar to them. Stir well.

Squeeze the juice of a medium-sized orange and add it to the apples.

Then add the soda, oil and raisins.

Stir and add the dry mixture in parts.

The resulting mixture is quite thick.

Cover a rectangular mold with baking paper and pour the mixture in it.

Sprinkle it with nuts to your taste (I added pecans and sliced almonds) and bake the apple cake in a preheated oven at 360°F (180°C) with a fan for about 40 minutes.
