How to make
Put the eggs and sugar in a bowl and beat with a mixer into a fluffy cream. Pour the oil and cream in a thin stream, while stirring with a spoon.
Sift the flour with the baking powder, a pinch of salt and the two vanillas. Add it in portions to the liquid mixture.
Cut one apple into cubes and pour 2 tbsp. of rum over it. Line a 8.5″ (22 cm) cake tin with a piece of baking paper.
Pour half of the mixture, spread the sliced apple on top and cover with the remaining mixture.
Place sliced apples on it. Sprinkle with 1 tbsp. of brown sugar. Bake the cake at 340°F (170°C) in a preheated oven for about 35-40 minutes.
Check it with a wooden skewer to see if it is fully baked. The baked apple cake is sprinkled with powdered sugar while it's still warm.
