How to make
Boil the bulgur according to the instructions on the package - there is one that is boiled in water, a ratio of 1:1 and immediately removed from the heat, leaving it to swell under a lid. There is another one that boils for about 10-15 minutes. Read on the package what type yours is. Leave it to cool and season it with two pinches of salt.
Lightly beat the eggs in a bowl and add the yogurt, soda, oil and two pinches of salt. Mix well and then crumble the white cheese inside.
Spread out the filo pastry sheets and take two at a time, spreading evenly from the filling and bulgur and rolling them up.
Twist the rolls into a round, greased baking pan, giving it the shape of a snail. Arrange thin pieces of butter on top and place it in an oven heated to 360°F (180°C) for about 30 minutes or until golden brown.
When removing it from the oven, wrap it with a towel if you want the filo pastry pie to be soft, otherwise leave it to cool uncovered.
