How to make
The mutton is made into flatter pieces, the size of medium steaks, which are well salted and sprinkled with freshly ground black pepper.
The paprika is mixed with a little wine, lemon juice and mustard until a smooth thick sauce or paste is obtained.
This marinade is used to coat the mutton chops evenly on all sides. Arrange them in a greased baking pan and between them place the onion cut into thicker crescents, as well as the cleaned and chopped hot peppers.
The baking pan is covered and the meat is left for 2 hours in a cool place to flavor.
Then parsley and chives are chopped on top. Pour the wine and cover them with foil.
Place the baking pan with the chops in a moderately heated oven (190-200°C) for 2 hours and 30 minutes.
Remove the foil and bake a little more if desired.
Serve the marinated mutton chops with a nice red or white wine.
