How to make
Dissolve the yeast, a pinch of sugar and 1.4 oz (40 g) of the flour in the slightly warmed water. Beat into a thin mixture and leave it to activate.
Sift the flour into a bowl and make a well into which you need to pour the yogurt, oil and yeast. Sprinkle the salt on the side of the flour, so that there is no direct contact with the yeast.
Knead a smooth and elastic dough, by sprinkling in a little extra flour until it stops sticking to you. Let it rest on a floured kitchen counter for 15 minutes, covered with a clean towel.
Shape the Christmas Ritual Bread into a round shape, by decorating it with figurines according to your wishes - symbols of fertility and prosperity. They can be wheat, a cross, a symbol of faith, flowers and the sun for good luck and bright days in the upcoming year, as well as others according to your imagination.
I only smear the figurines with a little water, a pinch of soda and flour, so that they stand out better. I also shape them after the bread has risen for 1 hour. That way the figurines will not be deformed.
The ritual bread is baked at 360°F (180°C) for 35-40 minutes or until golden brown.
Traditionally, this bread is mixed with ritual water brought by a maiden or young bride.
It is broken in the shape of a cross by the eldest member of the family and the first piece is dedicated to God and another is buried in the yard for a fruitful year.
