How to make
Wash spinach leaves and strain them well. You have to weigh them before you wash them, because no matter how well you strain, the weight of the leafy greens will still increase a bit.
Put the spinach in a blender. Beat the three eggs and add the salt, milk and flour.
Blend everything until the green leaves are perfectly blended and a smooth pancake mixture is obtained.
Heat a pan with a non-stick bottom on a moderate heat (from 9 degrees - on the 6th). Spread with oil and pour a small ladle of the mixture.
Cook for 2 minutes on one side and 1 minute on the other. Do this until you run out of the pancake batter for the green pancakes.
Serve these bright green Spinach Pancakes with white cheese and crunchy fresh radishes.
