How to make
A delicious and aromatic dietary sponge cake that will become your favorite.
Separate the egg whites and yolks into two bowls.
Add the sweetener and vanilla to the yolks. Beat with a mixer, until the mixture becomes light. It should become like a cream.
Then add the cream cheese and butter. Beat again with a mixer.
Add the lemon peel and lemon juice. Mix with a spatula.
Add the flour and baking powder. Mix with a spatula or whisk. The mixture becomes quite thick.
Beat the egg whites very well.
Add the beaten egg whites to the yolks in two additions and mix. It will be more difficult at first.
Pour the keto cake mixture into a suitable baking pan or dish. Bake in a preheated oven at 180°C for about 30-40 minutes. Baking depends on the oven. Mine is gas. Leave it to cool. I sprinkled stevia and lemon peel on top.
I use a 23 x 9 cm silicone baking pan.
Note: If your eggs are smaller, add 5.
I use stevia for sugar-free cakes which is 1:1 with sugar and erythritol powder. In the recipe, I mix 50 g each of the two sweeteners.
