How to make
Boil the catfish in a pot and add a head of onion, a stalk of celery (roughly chopped), lovage and the parsley stalks. Dice the carrot, potatoes, onion, celery stalk and parsley leaves. Fry all the vegetables in a pan with heated oil.
After the fish is cooked, remove it along with the vegetables from the broth and strain it.
Pour a small portion of the liquid into the pan with the vegetables. Then return them to the bowl with the remaining broth. Return everything into the pot on the stove.
Debone the fish and add it as well. Let the soup boil for about 10 minutes.
Serve it garnished with fresh parsley leaves and a lemon wedge.
