Do you like noodle soups? If the answer is yes, then you will be delighted with this cauliflower soup, which contains not only noodles, but also a bouquet of healthy vegetables.
The onions, garlic, celery and carrot are finely chopped or grinded. They are stewed for 4 minutes in the oil and a little salt, which helps to release the liquid.
Add the cauliflower, cut into small florets, larger ones can also be cut. Add the sage and stir for 1-2 minutes.
Pour the stock and boil the delicious vegetable soup for 20 minutes with the lid on. Add salt, if necessary.
Add the noodles and boil for 1-2 minutes or as directed on the package. Leave them harder, because when they are left in the hot liquid without being on the stove, they swell and softens in 3-4 minutes.
The easy and very tasty cauliflower soup is served hot, sprinkled with fresh herbs according to taste and grated Parmesan or mature cheddar.
