How to make
The mushrooms are cleaned, cut into slices and fried in heated oil.
They are mixed several times and the finely chopped onion and carrot are added to them.
When the vegetables soften, add the finely chopped garlic cloves, the paprika and a little later the blended tomatoes.
The bulgur is soaked in water for ten minutes, strained and put in the pot with the other products along with the vegetable broth (hot).
Season the stew with salt and dry thyme.
Cook for 10 minutes, then add the washed spinach.
The pot is covered and the stove is turned off.
The lid is not removed for at least 20 minutes to allow the spinach to steam and the bulgur to absorb the liquid. Great spring spinach stew!
