How to make
Peel and grate the carrots.
Chop the walnuts.
Activate the soda in the yogurt.
Beat the eggs with the sugar and vanilla.
Gradually add all other ingredients, by stirring after each addition.
Finally, add the grated carrots and mix.
Transfer the carrot cake mixture into a tray lined with baking paper and bake in a 340°F (170°C) oven for 35 minutes, until it is fully baked.
Cool the finished gluten-free cake on a wire rack and then pour the melted chocolate mixed with a spoonful of oil over it.
If desired, sprinkle with some nuts.
