Ingredients

  • butter - 7 oz (200 g)
  • flour - 10.5 oz (300 g)
  • sugar - 4.2 oz (120 g)
  • cocoa - 1.4 oz (40 g)
  • for the stuffing
  • cottage cheese - 1.1 lb (500 g)
  • eggs - 4 pcs.
  • sour cream - 3.5 oz (100 g)
  • sugar - 7 oz (200 g)
  • vanilla sugar - 1 tbsp (10 g)
  • starch - 1.1 oz (30 g)

How to make

Mix the flour, cocoa and sugar in a bowl.

Add the softened butter and rub it with your hands, until crumbly and place the bowl in the fridge.

In another bowl, put the cottage cheese, eggs, sugar, sour cream, starch, vanilla sugar and mix, until there are no lumps.

A homogeneous mixture should be obtained.

Remove the bowl from the fridge, pour about 2/3 of the crumbs into an 7″ (18 cm) diameter tin lined with baking paper.

Distribute them evenly on the bottom, press with your fingers and form an about 0.8″ (2 cm) high border.

Then pour the cottage cheese stuffing. Sprinkle the remaining crumbs on top.

Bake the cake in a preheated oven at 360°F (180°C) for about 50-60 minutes.

Remove the peat cake from the oven and let it cool well in the tin, then put it in the fridge for a few hours.

i used cottage cheese which probably baked up firmer than cream cheese would. Cottage cheese makes a very good old fashioned pie also. I assumed cornstarch was the starch and it worked fine.

You list starch as an ingredient. what starch are you talking about. The only starch I know is cornstarch, and how do you measure 1 There stillis no mention of why it is called a Peat Cake.
