How to make
Clean the onion and cut it into crescents. Put a pan on the stove, pour olive oil and heat it up.
Add the onion and fry, by stirring occasionally. When the onion turns golden, add the balsamic vinegar, leave it to evaporate and add honey, salt, black pepper and thyme.
Stir and cook for a few minutes. Remove it from heat and let it cool. Roll out the puff pastry and cut it into squares with a side size of about 4″ (10 cm).
Put baking paper in the tray, in which you will bake, arrange the squares in it with a small distance between them.
Grab a fork and pierce the middle of the dough squares, when baking, this will help only the sides to rise, which will form a slight border.
Heat the oven to 390°F (200°C). Place a spoonful of the onions in the middle of them and crumble a little of the blue cheese over each one. Beat the yolk and spread the sides of the puff pastries.
Place the tray in the oven and bake until golden, for about 15 minutes. You can judge if that would be enough in your oven.
Leave them on a metal rack to cool before serving.
