Ingredients

  • iceberg - 1 pc.
  • calamari - 12 oz (350 g), medium - sized
  • parmesan - 3.5 oz (100 g)
  • flour - for rolling
  • salt
  • milk - to soak the calamari (optional)
  • oil - for frying
  • For the dressing
  • lemon - 1 pc.
  • olive oil - by taste
  • honey - 1 tbsp.
  • basil - 5 - 6 fresh leaves

How to make

Prepare the dressing, by mixing the liquid ingredients well with the salt. Chop the basil leaves and add them to the rest of the products.

Clean the calamari and cut them into rings.

A little trick to keep them tender is to soak them in milk for an hour. This way, the calamari itself will remain soft and the outside will be crispy. Dry well, sprinkle with salt and roll them in flour.

Heat a generous amount of oil and fry briefly until golden, by shaking off any excess flour before dropping them into the pan. Leave the fried calamari onto kitchen paper, which will absorb the fat.

In a deep bowl, roughly chop the Iceberg and pour the dressing. Stir, to flavor everything and place the warm calamari on top.

Sprinkle generously with finely grated parmesan. Garnish with mayonnaise sauce, if desired.

Eat the salad while it is warm.
