How to make
Fresh goat cheese is usually stored in a liquid, so you need to dry it well and leave it at room temperature for about 30 minutes on absorbent kitchen paper.
It can be in a rectangular or round shape and the thickness is according to the size. If it's too thick, cut it in half lengthwise.
Toast the nuts briefly in a dry pan, if your pistachios are roasted, do this only with the walnuts.
Heat a non-stick pan over high heat, add a little olive oil and sear the cheese on both sides, until it has nicely browned and acquires a crust.
Remove it immediately, spread it with honey and sprinkle it with the nuts and a pinch of thyme. I also use thyme honey, which enhances the aroma even more.
Serve the baked cheese right away while it's warm.
