Ingredients

  • ladyfingers - 7 oz (200 g) soft for a cake
  • mascarpone - 4.4 oz (125 g)
  • peanut butter - 3.5 oz (100 g)
  • powdered sugar - 3 - 4 tbsp.
  • confectionery cream - 4/5 cup (200 ml)
  • espresso coffee - 2/5 cup (100 ml)
  • cocoa - for sprinkling

How to make

Today I offer you a quick ladyfinger cake, that does not require baking and comes close in taste to the classic Tiramisu.

You will need no more than 20-30 minutes to prepare it.

The only downside is that you will have to wait at least 12 hours to enjoy it.

With mixer on low speed, beat the mascarpone, peanut butter and powdered sugar, until they have mixed well.

Add 200 ml of well-chilled confectionery cream and beat again, this time on high speed of the mixer, until peaks form.

It will take you no more than 5 minutes.

I used sweetened cream so the amount of sugar is low, but you can add more according to your taste.

Prepare a rectangular mold and arrange the ladyfingers on the bottom, close together.

Make a strong espresso and sweeten it with a spoonful of sugar.

If you do not have an espresso coffee machine, you can use the same amount of milk with 1 spoonful of nescafe dissolved in it.

Using a silicone brush, coat the ladyfingers generously with the coffee.

Then cover the ladyfingers with part of the cream and continue in the same way, until you run out of products.

The mold I used is 10x6″ (25x15 cm) and I made three rows of ladyfingers covered with cream.

Finish off the ladyfinger cake with cream and sprinkle it with a little cocoa.

Cover it with cling film and refrigerate it for at least 12 hours.

Quick, easy and very tasty ladyfinger cake with peanut butter.
