How to make
Put the dates in a pot, cover them with water (ratio 1:2) and boil them for 40 minutes after reaching a boiling point.
Then blend them, until a homogeneous and smooth mass is obtained and transfer it into a fine strainer to strain all the liquid.
Put the strained liquid in another pot along with a slice of lemon.
Boil, until a drop of it holds its shape on a cold plate.
Pour it through a strainer into a jar and the pekmez is ready.
A marmalade can be obtained from the remaining thick mass.
