Ingredients

  • eggs - 2 large
  • sugar - 5.5 oz (155 g)
  • extra virgin olive oil - 4 1/3 tbsp (65 ml)
  • salt - a pinch
  • vanilla powder - 1 pc (0.2 g) or essence
  • baking powder - 1 tsp.
  • white flour - 3.5 oz (100 g)
  • walnuts - 3.5 oz (100 g)
  • powdered sugar - for sprinkling

How to make

In a large bowl, beat the eggs along with the sugar and olive oil, add the salt and vanilla.

Add the flour along with the baking powder and mix, until you get a slightly sticky dough, which, however, comes off the sides.

Divide the dough into 2 equal parts and shape it into two loaves on a tray covered with baking paper.

Put the dough in the refrigerator for 30 minutes - 1 hour.

Sprinkle the loaves with powdered sugar and bake them in a preheated oven at 340°F (170°C) for about 25-30 minutes, or until they aquire a golden color.

Remove them from the oven and leave them to cool completely.

Cut it into about 0.4″ (1 cm) thick slices and arrange them back on the tray. Bake for another 10 minutes.

Allow the ready-made cantuccini to cool completely and store them in a container with a lid.

The Walnut Cantuccini are ready.
