How to make
Mix the flour along with the vanilla, sugar, salt and baking powder in a large bowl.
Add the soft butter to them and mix all the products well, until you a crumbly mixture is obtained.
Beat the eggs one at a time and beat the mixture with a mixer on low speed.
Cut the dried fruit into small pieces and pour them into the mixture.
Chop the hazelnuts and add them along with the pre-soaked almonds.
Knead the dough and divide it into equal parts.
Shape them like baguettes and place them in a tray onto baking paper.
Bake them for about 20 minutes at 360°F (180°C).
Let them cool slightly and cut them diagonally with a sharp knife.
Place them with the cut side up and bake them for another 10 minutes.
Put the cantuccini in a box and serve them at the festive table.
