How to make
Grease the mold with butter and store it in the refrigerator.
Melt the butter and leave it to cool.
Beat the eggs with the sweetener, vanilla, lemon and grated peel.
Add the almond flour and coconut flour along with the baking powder. Beat again!
Add the cooled butter in a thin stream and beat!
2/3 of the molds are filled. Scoop a spoonful of the mixture and spread it in the molds with your fingers.
I baked the madeleines at 360°F (180°C) for 15-20 minutes, but my oven is gas. Keep an eye on them! Basically, they say that these sweets are baked for 10-15 minutes.
