"Literally translated, Croque Madame means crunchy lady. A delicious sandwich with ham, butter and a crispy crust, topped with an egg and a gorgeous sauce. Croque Madame is the perfect breakfast!"

Ingredients

  • butter - 1.8 oz (50 g)
  • salt - 1/4 tsp.
  • yellow cheese - 1/2 cup (grated)
  • bread - 4 slices
  • mustard - 2 tsp.
  • ham - 2 slices
  • eggs - 2 pcs.
  • for the sauce
  • butter - 1.1 oz (30 g)
  • milk - 1 cup
  • flour - 1 tbsp.
  • yellow cheese - 1/2 cup (grated)

How to make

The oven is heated to 390°F (200°C). A sauce is prepared by melting the butter over high heat, adding the flour and frying, until it aquires a golden color. Add the milk and boil for 2 minutes, by stirring constantly. Remove it from heat, add the yellow cheese.

Two slices of bread are smeared with mustard and a slice of ham is added on top. Spread the sauce on the other two slices of bread. They are sprinkled with yellow cheese and the slices of bread are stuck together two by two.

The butter is melted over medium heat and the sandwiches are fried in it for 2 minutes on each side. The sandwiches are placed in a baking pan and an egg is cracked on each one. Bake for 3-4 minutes and drizzle them with the remaining sauce.
