"This almond pesto is great for pasta and other food"

Ingredients

  • almonds - 3.5 oz (100 g) peeled
  • basil - 1/2 bunch
  • arugula - 1 handful (optional)
  • garlic - 2 cloves
  • parmesan - 4 tbsp. coarsely ground (crumbs)
  • salt - by taste
  • olive oil - to the desired thickness

How to make

Wash and strain the basil and arugula well.

Remove the thick stalks of the basil and put the leaves in a blender along with those of the arugula, as well as the almonds, garlic, salt and a little olive oil.

Grind, until a smooth sauce is obtained, but not too fine.

Add the Parmesan and pour in the olive oil, until the desired consistency is obtained.

If you are going to use the almond pesto for flavoring or pasta sauce, leave it thicker or add more parmesan.

If you want to use it to flavor a fresh Italian salad or roasted vegetables, you can dilute the basil pesto with more olive oil and a little lemon juice and use it as a dressing.
