Ingredients

  • kiwi - 2 pcs.
  • prawns - 10 - 12 pcs. (king prawns, fresh or defrosted, not blanched)
  • green salad - 8 leaves of curly lettuce
  • cheese - about 2.1 oz (60 g) hard mature (Manchego, Parmesan, mature Gouda or Cheddar)
  • FOR THE DRESSING
  • olive oil - 2 2/3 tbsp (40 ml) extra virgin
  • salt - 1/2 tsp.
  • dijon mustard - 1 tsp.
  • black pepper - 2 pinches
  • balsamic vinegar - 2 tbsp. (or by taste)

How to make

This prawn salad is a surprisingly good combination of freshness and flavor! It combines the sweetness and slight acidity of the kiwi with the delicate seafood flavor of the prawns in combination with aromatic cheese and a slight spiciness from the black pepper.

Start by preparing the prawns, so they can cool down. Of course, they can also be bought blanched, but it is always better to make them yourself.

Boil water in a pot and add the seafood in it. After a minute and a half or two at most (they should have turned pinkish-orange), remove them with a slotted spoon and place them in a bowl of ice. After a few minutes, peel them, by leaving a few unpeeled prawns, if you wish.

Wash, strain or dry the salad leaves. Shred them into a large plate.

Peel and slice the two kiwis into thin circles and place them on top of the lettuce.

Add the diced cheese and the peeled prawns.

Drizzle the green salad with a delicious dressing made from the mixed olive oil, vinegar, salt, mustard, and black pepper.

Serve them with a glass of fine white wine, preferably Riesling.
