How to make
In a clean bowl beat the egg whites well. Add the lemon juice and gradually start adding the sugar. Beat very well, until a fluffy and glossy cream is obtained.
Divide the mixture into two parts. Add the coloring to one and mix gently.
Fill a piping bag with a star shaped tip. Line a tray with baking paper. Pipe out little swirls at a distance.
Sprinkle them with sugar snowflakes. Bake (dry) at 210°F (100°C) for about 2 hours. Take them out and arrange them on a wire rack. Pour the white mixture into a piping bag fitted a round tip.
Pipe out small piles at a distance from each other. Sprinkle the meringues with sugar balls and bake them in the same way.
Arrange the green meringues on a tray and sprinkle them with coconut shavings and sprinkle the white ones with icing sugar to mimic snow.
The number depends on the size of the meringues.
The Christmas Meringues are ready.
