How to make
Wash the peppers, put them in a bowl and cover them with hot water. Cover them with a lid (plate) and leave them for 30 minutes to soften. Wash the bulgur and soak it in cold water for 30 minutes.
Pour oil into a pan. Cut the onion and carrot into cubes and fry them. Cut the mushrooms into cubes and add them to the onion and carrot. After they are fried, add the strained and swollen bulgur.
Mix well, pour about 2/5 cup (100 ml) of water and leave it for 3-4 minutes on the hob. Remove it from the heat and add a portion of the olives (finely chopped) and parsley.
Take out the peppers and remove the stems and seeds. Fill them with the stuffing and arrange them in a tray. Divide the remaining stuffing between the peppers and arrange the remaining olives.
Pour about 2 cups of the water, in which you have soaked the peppers.
Bake the stuffed peppers at 390°F (200°C) for about 30-35 minutes, or until they're done.
The stuffed peppers with bulgur, mushrooms and olives are very tasty.
