How to make
Mix the water with the milk, add the yeast and 1/2 tsp. of sugar. Sift the flour, pour the liquid with the yeast, add 1 tbsp. of olive oil, salt and a small egg. Knead a soft dough.
Put the kneaded dough into a bowl, cover it with a piece of cling film and leave it in a warm place to rise.
Finely chop the fresh rosemary, sage, marjoram and garlic clove.
Melt the butter and mix with the spices.
On a floured surface, roll out the risen dough. Cut out circles with a 4″ (10 cm) diameter cup. Spread them with the butter with spices.
Fold the circles in half and arrange them in an oblong cake tin lined with a piece of baking paper.
Leave the brioche to rise again for about 1 hour. Bake the bread at 360°F (180°C) in a preheated oven for about 20 minutes.
After removing the baked brioche from the oven, spread it with the aromatic butter.
Enjoy! The savory brioche accordion with aromatic herbs is ready.
