  • bacon - 12 strips
  • oregano - a pinch
  • yellow cheese - 3.5 oz (100 g)
  • onion - 1 small onion
  • for the tomato sauce
  • ground tomatoes - 10.5 oz (300 g)
  • tomato paste - 2 tbsp.
  • olive oil - 1/2 cup
  • garlic - 1 clove

How to make

The American meat roll originating from Scrapple (a mixture of ground pork and corn flour). The recipe was prepared in Pennsylvania by immigrants with German roots.

The modern version appeared in cookbooks in the 19th century. Making a meat roll was a way to patch up the family budget during the years of the Great Depression. A variety of spices, leftovers such as bread, corn flour and various seeds were added to the cheap minced meat.

In a more modern version, the Scrapple recipe includes vegetables and cheeses. The savory roll is served with a variety of sauces - tomato, mushroom, gravy sauce, etc. It can be wrapped in strips of bacon or spread with mashed potatoes and baked. Almost every cuisine has its own meat roll!

Put the minced meat in a bowl. Add the crumbled and squeezed bread, one egg, parsley, oregano, salt and black pepper. Knead the minced meat and leave it for an hour in the refrigerator.

On a piece of baking paper greased with olive oil, spread the cooled minced meat into a small rectangle. Sprinkle it with small cubes of yellow cheese. Using the paper, roll it up. I made a grid out of the bacon strips to wrap around the roll. Arrange 6 strips side by side.

Raise each even strip to the top. Lay one of the remaining 6 strips horizontally. Pull down the even strips and lift up the odd ones. Put a strip horizontally again and pull down the raised ones again. Continue like this, until you run out of strips. It sounds complicated, but it's very easy.

With the grid, fold the minced meat roll. Put it on a tray lined with baking paper. Drizzle with a cup of olive oil and a cup of white wine.

Add a clove of garlic and a sprig of rosemary to the liquid. Bake the roll at 370°F (190°C) for about 40 minutes.

Pour the tomatoes into a saucepan. Add the tomato paste, season with salt and olive oil. Boil the tomato sauce for about 15 minutes. When it is ready, add a finely chopped clove of garlic and parsley.

Slice the baked roll and pour the tomato sauce over it. You can serve it with fries.
