How to make
Start off by preparing the side dish first, so that it is ready, since the fish is cooked very quickly.
Fry the onion (cut very finely), the peppers (cut into strips) in the heated olive oil and a pinch of salt.
When the vegetables soften, add the wine and leave them on high heat, until the alcohol evaporates.
Immediately after that, pour the tomato puree and reduce to medium heat. Add the garlic and leave them to simmer for 10 minutes.
Finally, add a spoonful of honey and as much salt as you like. Cook for another 5 minutes and remove them from the heat.
For the fish, prepare a baking pan covered with aluminum foil (can be without it) and arrange the fillets (if they have skin, it should be on the bottom), smear them with a little olive oil or drip a few drops on each one.
Make a smooth mixture of the products for the sauce, during which time you can turn on the oven to heat up to 390°F (200°C).
Distribute the sauce evenly on each filet. Here you can use your imagination and add nuts on top - pumpkin seeds, sliced almonds or sprinkle with breadcrumbs, so that the fish can form a crispy crust.
Bake in the preheated oven at 390°F (200°C) for exactly 12 minutes! This is important, in order to make the fish more tender.
Serve it with the prepared side dish. Carefully place the prepared filet on it and decorate with something green (for example, parsley) or with balsamic vinegar reduction.
