Ingredients

  • lamb sweetbreads - 9 oz (250 g)
  • salt - 3 pinches or by taste
  • coriander - 1 tbsp. finely chopped
  • parsley - 1/2 tbsp. finely chopped
  • black pepper - optional (freshly ground)
  • olive oil - 3 tbsp.

How to make

Boil the lamb sweetbreads briefly (for 10 minutes) in very lightly salted water. Strain and dry them.

With a sharp knife or kitchen scissors, remove the white skins, which can be found here and there on the meat. You can do it and while they are raw, the skins are similar to chicken skins and are very easy to remove.

You can cut the pieces of meat in half or leave them whole.

Grill on a high heated grill, by being careful not to overcook or turn black the outside - this will take away a lot of their flavor.

Season them with salt, drizzle them with olive oil and sprinkle them with fresh coriander, parsley and serve them warm.
