Ingredients

  • flour - 12 oz (350 g)
  • sugar - 3.5 oz (100 g)
  • ricotta - 3.5 oz (100 g)
  • sunflower oil - 2/5 cup (100 ml)
  • milk - 2/5 cup (100 ml)
  • salt - a pinch
  • baking powder - 1 tbsp (10 g)
  • vanilla - 1 powder (0.2 g) or essence
  • grated lemon peel
  • for the stuffing
  • apples - 4 pcs. (medium - sized)
  • raisins - 1.8 oz (50 g)
  • brown sugar - 2.8 oz (80 g)
  • lemon juice - 1 tbsp.
  • cinnamon - 1 tsp.

  • rum (to soak the raisins)

How to make

Put the raisins in a bowl, cover them with rum and leave them for 15 minutes to soften.

While this is happening, prepare the filling for the buns. Peel and cut the apples into small pieces.

Put them in a convenient pan, pour a tablespoon of lemon juice over them, sprinkle them with a teaspoon of cinnamon and 2.8 oz (80 g) of brown sugar. Put the pot on low heat and cook for about 10 minutes or until the apples soften. Stir occasionally.

Leave the finished stuffing to cool. Add the raisins.

Sift the flour with a pinch of salt and a packet of baking powder in a bowl. Pour the oil, milk and add the ricotta.

Flavor with grated lemon peel and vanilla. Knead a soft dough. The dough is very aromatic and easy to work with and after baking, the buns are crumbly and have a wonderful aroma of apples and cinnamon.

Make 12 buns from the dough. Try to make them the same size. On a floured surface, roll out each bun. Put a spoonful of the filling in the middle and shape it into a ball. Spread the buns with oil and arrange them in a greased tray.

Put the tray in an oven heated to 340°F (170°C) with a fan and bake for 15 minutes.

Remove the tray from the oven, spread them again with oil and sprinkle with sliced almonds.

Return the tray back into the oven and finish baking, until a golden brown color is obtained. Sprinkle the baked apple buns with powdered sugar while they're warm!
