How to make
Cut the onion into crescents. Put them in a pan with heated olive oil, add salt, add 1 bay leaf and 3 tbsp. of water.
Cover the pan and stew for 5-6 min. Remove the pan from the heat and cool the mixture.
Sift the flour with one packet of baking powder and a pinch of salt.
Beat the eggs and milk with a fork. Add the dry mixture in portions, diced smoked bacon, grated parmesan and the cooled red onion. Season with a pinch of black pepper.
Homogenize the resulting mixture well. Line an oblong cake tin with baking paper.
Pour the mixture and level it out. Arrange red onion slices on top. Bake the savory cake at 360°F (180°C) in a preheated oven for 25-30 minutes.
Do not bake it too long, to prevent it from becoming dry.
Remove the Savory Cake with Red Onion and Smoked Bacon from the oven and immediately spread it with olive oil.
Cool it on a wire rack.
