How to make
Soak the raisins in a little water with a cup of rum. Cut the apples into thin slices and pour the lemon juice over them.
Pour the sugar and softened butter into a bowl. Beat with a mixer, until a homogeneous mixture is obtained. Add the eggs one after the other, by still beating with a mixer, until you get a smooth cream.
In another bowl sift the flour with the baking powder, a pinch of salt and cinnamon.
Add the dry mixture into the butter mixture in portions, by stirring with a spoon.
Add the raisins, which have been dried with a little flour and homogenize the mixture.
Line a 7x11″ (18x28 cm) rectangular baking pan with a piece of baking paper. Pour the cake mixture in it.
On top of it, overlapping and in rows, arrange the slices of apples and between them the cherries.
You can use candied or compote ones. Sprinkle the cake with one tablespoon of brown sugar.
Bake the fruit cake at 360°F (180°C) in a preheated oven with a fan for about 30 minutes.
Sprinkle the baked apple and cherry cake with powdered sugar.
