How to make
Peel and cut apples into small pieces. Pour the lemon juice over them. Stir well.
In a large bowl, beat the eggs, add the sugar and beat with a mixer, until a fluffy and smooth mixture is obtained. Pour the yogurt into the beaten mixture and pour the melted and slightly cooled butter in a thin stream.
In another bowl, sift the flour, baking powder and cinnamon.
In portions, add the dry mixture to the liquid one, while stirring with a spoon.
Grease and flour a large muffin tin. Pour half of the cake mixture into each and add the sliced apples on top.
Sprinkle with a pinch of brown sugar.
Bake the muffins at 360°F (180°C) in a preheated oven with a fan, until they're nicely browned.
Take out the baked apple muffins and spread them with apricot marmalade, diluted with 1-2 tbsp. of water, while they're still warm.
Cool the soft apple muffins on a wire rack!
