How to make
Make a syrup from the sugar and water by putting them on medium heat for about 15 minutes. Leave the mixture to cool.
Cut the watermelon peel and remove the seeds. Cut it into pieces and blend it. Pour the sugar syrup to it and blend briefly again.
Transfer it into a convenient container and cover it with cling film, then store it in the freezer for about 2 hours. During the first hour, take it out and beat/stir periodically (this is important to prevent large crystals from forming). If you want a thicker (icier) sorbet, you can increase the time in the freezer, but not until it is completely frozen. The idea is for the iced treat to be like fluffy frost - neither too liquid, nor solid.
Distribute it into matching tall glasses and garnish it with mint. It also works great if you finely chop the fresh herb leaves over the sorbet.
