Squeeze the lemons. Mix the sugar with 2 cups of water, add the lemon juice and boil the mixture for 6 minutes over low heat.
Remove it from the heat and allow it to cool completely. The watermelon is cleaned from its seeds and it is blended. Add the sugar syrup and champagne and blend the mixture with a blender or mixer for 2 minutes.
Pour the mixture into a bowl and leave it in the freezer for 3 hours, but also make sure to take it out every hour and beat it with a fork or wire whisk.
Serve the sorbet garnished with mint leaves.
