Ingredients

  • butter - 4 tbsp.
  • flour - 3 tbsp.
  • milk - 1/2 cup
  • goat cheese - 4.6 oz (130 g)
  • nutmeg - 1/4 tsp.
  • salt - 1 tsp.
  • white pepper - 1/4 tsp.
  • eggs - 4 large eggs

How to make

Heat the oven to 360°F (180°C). In a suitable container, heat the butter on the stove over medium heat. Leave 1 tbsp. of the butter for greasing the soufflé bowls.

Fry the flour in the butter for about a minute. Add the warm milk, grated cheese, nutmeg, salt and black pepper. Stir for about 3 minutes over the heat and take it off.

Separate the yolks from the whites. Add the egg yolks one at a time to the cheese mixture and mix after each one, until it is absorbed by the mixture.

Beat the egg whites, until a white mixture is obtained and gently mix it with the goat cheese mixture.

Divide the finished mixture into suitable bowls, which have been greased in advance with butter and sprinkled with flour.

Bake them in the preheated oven for about 12 minutes.

Serve the soufflé immediately.
