How to make
Delicious cake with apricots and coconut flour.
Beat the eggs and the sugar with a wire whisk.
Add oil, milk, chopped dates, pieces of chocolate and finally add the sifted flour with baking powder and coconut flour.
Melt the butter in a 9.5″ (24 cm) baking pan, add the diced apricots on top and pour the cake mixture over them.
Bake in a preheated oven at 360°F (180°C), until it's fully baked. Mine was ready in 35 minutes.
Take it out, run a knife along the walls of the baking pan and turn the coconut cake over into a plate.
Sprinkle with powdered sugar and mint leaves for a fresh touch!
