How to cook
Wash and strain the brown rice.
Put the milk in the pot on the stove. Add the sugar, vanilla, salt and lemon peel. Wait for it to boil.
Add the rice and raisins. Reduce the heat and leave it to boil for 45 minutes, by occasionally stirring. If you notice that the amount of milk decreases, add a little more.
Turn it off and pour the rice pudding into suitable bowls.
Roast the almonds in a non greased pan, by being careful not to burn them.
Cool and serve the brown rice pudding with brown sugar , sprinkled with cinnamon and almonds.
P.S. To cook the rice faster, soak it for half an hour in lukewarm water.
