How to make
Soak the gelatin in 4 fl oz (120 ml) of water to swell. Set it aside.
Pour the sugar, glucose and 5 fl oz (150 ml) of water into the baking pan. Stir, until the sugar melts and the mixture turns into a syrup. It must be very hot. Remove it from the heat and add condensed milk, the chocolate pieces and then the swollen gelatin. Stir, with a wire whisk.
The mixture can be divided into three parts and to each add the desired color. Stir periodically.
The cake is placed on a high surface and foil is placed under it so that the drops of glaze can be collected and they can be used again for another cake. With warm and dry palms, run over the sides of the cake to remove crumbs and make it as smooth as possible.
If the icing has no color, pour it directly on the cake at once, if colors are added, alternate the pours, by alternating the different colors on top of each other, so that they overflow.
If two colors are mixed, for example, they are mixed with a spoon, but very lightly and carefully enough to make a spiral pattern of the two colors and not to combine them into one. When they are poured, they will fall as they are in the bowl.
The glaze hardens quickly, so work quickly, because there is no time for adjustments. If you want to apply white paint, for example, on a dark blue background, the white paint is dissolved in advance, dip a paintbrush and spray it on the glaze.
Allow it to dry at room temperature.
