Ingredients

  • potatoes - 4 pcs. large
  • garlic - 8 cloves
  • olive oil - 4 - 5 tbsp.
  • salt - 1 tsp.
  • lemon juice - from 1 lemon
  • black pepper - 1 tsp.
  • paprika - 1 tsp.
  • rosemary - 1 tsp dried
  • oregano - a pinch dried
  • vegetable stock - 2/3 cup (150 ml)

How to make

Preheat the oven to 390°F (200°C).

Mix the herbs and spices in a bowl.

Peel the potatoes and cut into wedges. Place them in a bowl and season with the spice mix. Mix with your hands.

Arrange the potatoes in a tray, not touching each other.

Combine the olive oil, lemon juice, crushed garlic and vegetable stock. Stir and pour over the potatoes.

Cover the tray with tin foil. Bake at 390°F (200°C) for 40 minutes.

Remove the foil, sprinkle with Kefalotiri (hard, Greek cheese), or grated Parmesan cheese.

Bake the potatoes for 15-20 minutes, until they obtain a golden brown crust.

Sprinkle with finely chopped parsley.

You can prepare this recipe and a garnish for Fegato alla Veneziana, or other meat dishes, or as a main course.
