"Classic meatball soup, but with a touch of ginger"

Ingredients

  • carrots - 1 pc.
  • onion - 1 pc.
  • potatoes - 3 pcs.
  • noodles - 1 handful
  • minced meat - 7 oz (200 g)
  • ginger - 1 - 2 cm (fresh root)
  • parsley
  • salt
  • black pepper
  • boiled rice - 4 tbsp.
  • tomato puree - 1 tbsp.
  • yogurt - 3 tbsp.
  • yolk - 1 pc.

How to make

Boil the rice and strain it well. The minced meat is mixed with rice, seasoned according to taste with black pepper and salt.

Form small balls and roll them in flour. Pour and boil 8 cups of water in a pot.

Add the finely chopped onion, carrot, peeled and diced potatoes. When they boils, add the small minced meat balls and peeled and finely chopped ginger root and boil, until they soften.

Add the tomato puree and broken noodles. Cook over low heat, until it's fully cooked.

Beat 1 egg yolk with 3 tbsp. of yogurt and the meatball soup is thickened.

The meatball soup with ginger is ready.
