How to make
Beat the eggs with the sugar into a fluffy cream for 3-4 minutes at maximum speed of the mixer.
Add the oil, lemon juice and yogurt and while constantly beating, pour the packet of vanilla pudding.
Sift the flour along with the baking powder into the mixture and mix with a spatula, until it is completely absorbed.
Pour the sponge cake batter into a greased and floured mold.
Bake at 360°F (180°C) for 30 minutes or until it is fully baked.
Leave the baked sponge cake in the oven with the door open for 5 minutes, then turn it over onto a wire rack to cool evenly and not get moist.
Sprinkle it with powdered sugar or fruit topping (optional).
If you have used a packet of 3.5 oz (100 g) pudding, you can boil the remaining amount into a thinner cream (according to the package instructions) and pour it over the sponge cake.
