"A wonderful salad with bulgur for fans of healthy cuisine"

Ingredients

  • fine bulgur - 2 cups
  • tomato paste - 2 tbsp.
  • hot water - 2 1/2 cups
  • spring onion - 1 bunch
  • cucumbers - 1 pc.
  • red peppers - 2 pcs.
  • tomatoes - 2 pcs.
  • olive oil - 1 - 2 tbsp.
  • parsley
  • salt by taste
  • hot paprika - by taste
  • pomegranate juice - 2 tbsp. juice (or juice of 1/2 lemon)

How to make

Pour the bulgur into a bowl. Dissolve the tomato puree in hot water. Pour the bulgur with it and leave it for 10 minutes or until it softens.

Finely chop the spring onions, cucumber and red peppers and mix them in a bowl.

Peel and dice the tomatoes and add them. Mix them with the bulgur and stir with a fork, by adding a little of the olive oil. Add the chopped parsley.

Season with salt and hot paprika. Mix with the lemon juice.
