How to make
Sauté the finely chopped onion in the olive oil until soft. Add the pepper paste or tomato puree. Add the washed and drained bulgur, along with the salt, black pepper and paprika, lemon juice and finely chopped tomatoes.
Stir and in a little bit, top up with water, needed to melt the bulgur. Cook over low heat until the bulgur is fully boiled.
Pour in more water if needed. Finally, add the finely chopped green onion, parsley with the lemon juice.
Mix well and transfer to a large bowl. Serve with lettuce leaves.
You can prepare this Turkish garnish with fresh ingredients only, while only boiling the bulgur with some spices.
